Eggplant - Black Beauty - $3 pre-order and member price; $4 at plant saleDescriptionBlack Beauty is a classic heirloom eggplant variety introduced in 1902 that remains the standard for large, dark-purple fruits. It is highly regarded for its prolific yields and high-quality, creamy flesh.
Key Characteristics
Fruit: Produces large, bell-shaped, glossy purplish-black fruits weighing between 1 and 3 lbs.
Plant Habit: Sturdy, bushy plants reaching 24 to 36 inches in height and width.
Maturity: Typically ready for harvest in 74 to 90 days from transplanting.
Yield: Each plant can produce up to 12 large fruits under optimal conditions.
Growing Guide
Sunlight: Requires full sun (at least 6–8 hours daily).
Temperature: This tropical plant is extremely frost-sensitive and thrives in heat; soil temperatures should be at least 70°F for successful growth.
Transplanting: Move outdoors only when night temperatures consistently stay above 55°F–60°F. Space plants 18 to 24 inches apart.
Soil & Care:
Prefers rich, well-drained soil with a pH of 5.5 to 6.8.
Maintain consistent moisture (1 to 2 inches of water per week) to prevent fruit bitterness.
Use staking or tomato cages to support the weight of heavy fruit and prevent the plant from toppling.
Harvesting & Use
Timing: Harvest when skin is firm and glossy, usually when fruits are 5 to 6 inches long. If the skin turns dull, the fruit is likely over-mature and may be seedy or bitter.
Technique: Use pruners or a sharp knife to cut the stem, leaving about an inch attached to the fruit.
Culinary: Its tender skin rarely needs peeling. It is ideal for roasting, grilling, and classic dishes like Eggplant Parmesan or Baba Ghanoush.
